Sushi Towel

sushi towel
how long will sushi keep?

i plan on making california rolls(imitation crab, cucumbers, cream cheese, NO avacado) to take to school. to save time, i’m thinking on making them the night before, and storing them in the fridge by covering them with a damp paper towel and plastic wrap.

it should be a good twelve, thirteen+ hours before i get to eat them(8+ hours in the fridge and about four in my locker). do you think this is alright?

also, i want to make onigiri the morning of(canned albacore tuna in water, mayonnaise, black and red peppers, salt), so they would spend a good four-five hours in my locker.

Sushi should be consumed within 24 hours if kept in a cold refrigerator.
However, storing it in your locker for four hours is risky. That goes for the onigiri, containing mayonnaise.
