What is a good, simple, and easy recipe to use as a dipping sauce when eatting sashimi?

Thai Green Chile Sauce
Fiery green chile sauce is a common condiment in Thailand. This version uses eggplant to mellow this spicy sauce. We like to serve this as a dip for steamed vegetables or with rice.
Ingredients:
1 Chinese or Japanese eggplant, halved lengthwise
4 medium poblano chiles
2 cloves garlic
2 medium shallots
1⁄3 cup fresh cilantro leaves
1–2 tsp. Thai fish sauce
1 tbsp. fresh lime juice
Preparation:
Preheat broiler. Place eggplant (cut side down), chiles, garlic, and shallots on a cookie sheet. Cook until garlic is soft, 5 minutes. Remove garlic and set aside. Turn chiles and return cookie sheet to broiler for 5 minutes. Remove eggplant and shallots and set aside. Turn chiles again, and cook until they are charred, 3 minutes more. Place in a bowl, cover, and cool.
Scoop eggplant pulp out of skin with a spoon, then place pulp in the work bowl of a food processor. Peel and seed chiles. Slip off garlic and shallot peels, then add garlic, shallots, chiles, and cilantro to eggplant. Purée until smooth. Stir in Thai fish sauce and lime juice.
Miso Sauce

Ingredients:
2/3 c. miso paste
2 egg yolks from extra-large eggs
7 T. sake
8 T. sugar
4 T. dashi (Japanese bonito stock)
Preparation:
Combine in a double boiler over simmering water. Whisk steadily until eggs have set and sauce thickens a tad. Serve warm or at room temp.
Sweet Garlic Soy Sauce
In Philippine cuisine, dark, fairly harsh soy sauce is favored, but it's often combined with sugar to create a syrupy dressing for vegetables. The added garlic gives this sweet and salty sauce a pleasant kick.
Ingredients:
1/2 cup dark soy sauce
2/3 cup palm or brown sugar
2 garlic cloves, minced
Preparation:
Place the soy sauce and sugar in a saucepan and cook over low heat until slightly caramelized and thickened, about 5 minutes.
Remove from the heat and stir in the garlic. Cool and serve. This sauce will keep well, refrigerated, for a couple of days; bring to room temperature if you're using it as a dipping sauce. (If you're cooking with it, you can use it directly from the refrigerator, of course.) Yield: Makes 1/2 cup.
Soy-Ginger Dipping Sauce
Ingredients:
1/4 cup soy sauce
1/4 cup rice vinegar , unseasoned
2 1/2 teaspoons granulated sugar
1/4 cup water
1/2 medium scallion , minced
2 teaspoons finely grated fresh ginger
1/2 teaspoon sesame oil
1/2 teaspoon chili oil
Preparation:
Bring soy sauce, vinegar, sugar, and water to boil over medium heat, stirring briefly, until sugar dissolves. Pour into bowl; stir in scallion, ginger, and sesame and chile oils. Serve.
Hoisin Sesame Dipping Sauce
Ingredients:
2 tablespoons hoisin sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 tablespoon soy sauce
1 tablespoon vegetable oil
2 inch piece fresh ginger , minced (about 2 tablespoons)
2 medium cloves garlic , minced
2 tablespoons chopped fresh cilantro leaves
Preparation:
Mix hoisin sauce, rice vinegar, sesame oil, soy sauce, and 2 tablespoons water in small bowl; set aside. Heat vegetable oil in small saucepan over medium heat; sauté ginger and garlic until fragrant but not browned, about 30 seconds. Stir in hoisin mixture; cook until flavors meld, about 2 to 3 minutes. Off heat, stir in cilantro. Serve warm or at room temperature.
