Sashimi Brand

sashimi brand
reputable sushi blades and brands?

what are some of the most reputable Japanese blade brands? What would be some of the brands that would be of the highest price and quality, and what would be a brand (and type of knife, preferably a sashimi slicer) that would be avalable to offer the most bang for the buck?

I like to use Kershaw Shun knifes. They have reasonably priced models as well as expensive ones. My sashami knife was about 150.00. You can find pretty good deals on ebay. They offer pakkaa wood handles that are infused with resin making them sanitary as well as super strong.

the following is from cutleryandmore.com

The Kershaw Shun Chef’s Knife is ideal for chopping, dicing, cutting and slicing. This stunningly beautiful line of classic cutlery features the look and benefits of Damascus steel, yet without its rusting problems. The Damascus-look blade profile reduces sticking and results in less damage to the food being cut and faster prep times. In addition, the black Pakkawood handles provide the beauty of genuine wood, but since the wood is impregnated with a waterproof resin- they are as durable as plastic. VG-10 Stainless steel is clad with 16 layers of SUS410 high-carbon stainless steel on each side, producing a 33-layer rust-free Damascus look with a Rockwell rating of 61. VG-10 “Super steel” is composed of Carbon, Chromium, Cobalt, Manganese, Molybdenum, Silicon and Vanadium. Shun Classic features Ebony-black Pakkawood handles and end caps. Dishwasher safe, Made in Japan, Lifetime Warranty.

Shun Classic also features our uniquely stable “D” shape handle design. The “D” Shape handle prevents the knife from twisting in your hand and designed to fit the way your hand curves comfortably around the handle for complete control. The asymmetrical bolster is ground out more on the right side to provide proper finger placement and an easy, secure grip. The knives balance perfectly, with the pivot point just ahead of where the handle sweeps out of the blade.

Kershaw Knives, Ltd. designs and manufactures tools that customers are proud to own, carry, and use. Since 1974, Kershaw’s dedication to quality has led to a worldwide reputation for performance and innovation. From state-of-the-art manufacturing to advanced materials, customers rely on Kershaw for products that provide “Technology with an Edge.” Today, Kershaw is a wholly owned subsidiary of Kai Corporation- for over 90 years, Japan’s premier blade producer. Lai’s innovative approach to product development has resulted in over 10,000 superior products.
