What are the best salmon dishes you’ve had?
I don’t need the recipes, I just need the ideas.

Well, when I worked in kitchen the way we used to do it (and my fave way).
Preheat your oven to about 180c. Place tinfoil onto a baking tray with plenty of room on each side because you’ll need to fold it over later. Into the tinfoil drizzle some olive oil and place the fish skin side down . Then add shallots, dill (fresh), garlic cloves and then add white wine so it just goes about a fifth of the way up the fish. Then cover it loosely with the tin foil. Cook in the oven for about 10 minutes or until you feel the fish is cooked.
Serve with Butter Sauce (very fatty but a little is needed for each person.)
Put about 25g or more of block cooking butter in a few with some whole shallots. When the shallots are soft, sieve the butter into a separate pan and add 200ml of single cream and mix. Cut in some fresh chives to serve.
Serve with boiled baby potatoes and long stemmed broccoli.
