Snow peas are very good on udon.
Baby corn are very good on udon.
Canned corn actually tasted pretty good on udon.
Oyster mushrooms. Oyster mushrooms could be either cooked in the soup as-is or deep fried. When deep fried like tonkatsu or pork chop, oyster mushrooms could taste somewhat similar to pork. If you want them to taste somewhat similar to pork, you’ll need to use thinner mushrooms and fry them a little longer to get rid of the moisture.
Tempura vegetables are good. I like zucchini and sweet potato tempura. Of course tempura shrimp is always an option.
You could put wonton in your udon. There’s no rule stating that you couldn’t make vegetable wonton.
If you don’t mind spicy foods, kimchi soup and udon aren’t bad together. Koreans use kimchi in a lot of their foods including noodle soups. I put udon into kimchi soup out of curiosity and I was a little surprised how well it turned out. It is something quite different though.
Poached eggs and udon blend very well.
Omelet and udon aren’t that bad. There’s a Japanese noodle dish called Ten-shin ramen and it worked with udon too.
Imitation crab legs are very good on udon.
Seafoods like shrimp, scallops, crab legs and mussels mix very well with udon. Boiling any of those seafoods listed in udon soup will add flavor to the soup; the seafood itself tastes good too.
Not sure if you have tried those Asian fish balls yet. Fish balls and udon match nicely.
Japanese also put meat dishes on their udon. You could find fried chicken, fried pork chops and Japanese char-siu on udon very often.
You could put thin slices of roasted pork tenderloin on udon. Personally, I think it tasted better than Japanese char-siu.

Korean spicy beef soup with udon – flawless (to me at least).
Thai mixed seafood tom yum soup with udon – very nice combination if you could handle Thai dishes.
You could also add butter and cream to udon soup noodle. For quite a while, I really thought I was the first to do this until I ran into something quite similar at a Japanese noodle place; they were way ahead of me. LOL
Vietnamese put egg rolls into some of their rice noodle dishes. Well, egg rolls and udon noodle soup didn’t mix too well. Soggy egg rolls aren’t that great. LOL
